  • 2 slices high fibre white or wholemeal bread, crust removed
  • 2 tablespoons extra light cream cheese
  • 1/4 avocado
  • 1/3 cup finely grated carrot
  • 1/2 Lebanese cucumber, cut into lengths

How to Make

1. Flatten the bread slightly with a rolling pin and spread with cream cheese.

2. Spread a thin layer of avocado on the bread, then sprinkle with the carrot and top with a stick of cucumber. Fold over the bread to enclose the filling and roll up.  

3. Cut each sushi roll into three.
